About Honey Forest Thyme Raw & Organic from Crete
Our Cretan honey is produced in the traditional way resulting to a product that does not undergo any processing. Our beekeeper is passionate, knowledgeable and care about his bees. There’s almost a pet-like relationship between him and the hives. They don’t use any harmful chemicals, artificial sweeteners or antibiotics. He is a 4th generation beekeeper and already training the next one!
Honey bees gather nectar from the flowers and plants in their vicinity and carry it back to the give, where it is mixed with enzymes and stored. Water evaporation and enzyme action then turn the nectar into honey. The flavor of the honey varies according to the type of plants the bees have visited. Greece has a long history of bee-keeping and there are more bee hives “per acre” than any other country in Europe. Since ancient times honey has been used both as a food and a source of medicinal therapy. Honey is produced almost everywhere in Greece, but some places stand out. On the island of Crete, they produce the famous thyme honey.
Pure quality honey has many health benefits, including antioxidant effects, antifungal properties, the ability to heal wounds, soothe sore throats, and improve digestion.
Storage and shelf life
Store honey in a cool, dry, tinted airtight glass container or nonreactive metal container, away from the sunlight and heat. In all cases keep water and moisture away from your honey because these will cause fermentation and spoilage, unless you are making mead (fermented honey wine).
Honey, when properly stored, will remain safe to consume indefinitely. Over the year, it will lose color and some flavor. The low moisture content, low ph and antibacterial properties prevent spoilage.

The product is delivered in glass jars. We are doing our part to close the loop towards circularity by offering this product in glass container with a deposit (Statiegeld) which can be refunded in full at our store for your next purchase.

How to use
Thyme honey is a very strong, intensely aromatic honey with floral and herbal flavors; fresh and reminiscent of tropical fruits and dates. It is flowery and rich yet mild enough to be extremely versatile in savory and sweet dishes. On top of the thyme there is also a big variety of other wild herbs that are available in the island of Crete, this brings a complex and unique taste and aroma to the honey.
Use homey as a perfect spread on bread and rusks, ideal with yogurt, fruits, pancakes or cheese.
Try not to heat your honey rapidly, over direct heat. Basically, the hotter you heat it, the more potential for reducing nutritional value. If you want to use it as a sweetener to your warm beverage wait until it reaches drinking temperature (around 35C) and then add the honey so it can retain all its nutritional benefits.
If your honey begins to crystallize, it is not bad. Simply place the jar in warm water and remix the honey. The crystallization process is natural and spontaneous. Pure, raw and unheated honey has a natural tendency to crystallize over time with no effect on the honey other than color and texture.
