About Green French (Puy) Lentils Organic
Puy lentils, or lentilles du Puy, are French lentils that have been grown in the Puy region of central France. The variety is the same, but since they are grown in this distinct place (which has volcanic soil) the taste is slightly different — it’s even more peppery and flinty. If your bag of French lentils aren’t noted as Puy, then they were grown outside of this famous region, likely in North America or Italy. Regardless, both deliver the firm texture after being cooked and nutty flavor this variety is known for.
Storage and shelf life
Store green French lentils in a dry and sealable food storage container – we recommend glass. Keep the container in a cool, dry and dark area out of the sun and heat.
Green French lentils, when properly stored, have a shelf life for up 2-3 year.

How to use
There is no need to pre-soak Puy lentils. Put the lentils in a sieve and rinse them for 20 seconds under cold running water.
You can now drain the lentils and freeze the cooking liquor to use as a vegetable stock, alternatively use the lentils with their cooking liquor to make or add to a stew, curry, soup or sauce.
These lentils can be cooked for 25-50 minutes until tender.
