How to use
Pre-soaking black beans reduces their cooking time, improves texture and makes them easier to digest. Rinse them to remove any surface dirt and check that there are no small stones.
Ideally soak the beans overnight with enough water to cover them. When the time comes to cook them discard the soaking water and use fresh one for boiling them.
Don't season the beans during the cooking period. Do it at the end with plenty of olive oil and salt.
Cooked black beans freeze very well.
