About Arborio Rice (Risotto) Organic
Arborio rice is an Italian variety of short-grain rice commonly used in the classical preparation of risotto. The rice is named after the area in Italy where it was originally cultivated. The variety we offer is super fino, which is the largest grain size and its the most widely used.
Arborio rice is high in starch because it undergoes less milling than ordinary long-grain rice. While cooking the rice this extra starch is released making a firmer and creamier rice compared to other kinds of rice.
Storage and shelf life
Store organic Arborio rice in a dry and sealable food storage container – we recommend glass. Keep the container in a cool, dry and dark area out of the sun and heat. Keep the container away from liquids that may leak into it.
Organic Arborio rice, when properly stored, has an indefinite shelf life.

The product is delivered in recycled paper bags.
Nutricional information
At the rice mill only rice is stocked and processed, but the organic farmers supplying paddy rice might have other cereals or seeds in their rotation system. Most of eventual unintended cross contaminations by other cereals seeds will be selected and expelled by the Sortex and sieves.

How to use
Most of the rice types usually require rinsing before cooking. That is not the case with Arborio. Rinsing would remove the starch coating that gives the creamy texture when cooked.
As we do with pasta, arborio rice is prepared "al dente", which means that it should have a bite. If making a risotto, don't let it sit for long otherwise it will turn gluey.
Although risotto may be the most common use for arborio rice, there are other dishes where creamy rice is needed.
