Originally from Korea it has a very special flavor profile which balances between sour, spicy and umami. The mix of vegetables is pickled and fermented, which originally was a way to preserve the vegetables for the winter months.

Storage and shelf life
Kimchi keeps well in the fridge for several months. It is safe to eat after that point, although the flavors will intensify and will become more pungent and the vegetables might lose some of their crispness.
