About Jasmine Blossom Green Tea Kombucha LYS 750ml

Leave you Sword is an independent micro-brewery- fermentery and pastry creating amazing Kombuchas and not only.

You should drink LYS kombucha because it’s fuc**** delicious, with the complexity and terroir of a natural wine or aged whisky.

LYS has stripped the ingredients and brewing process back to their most primitive, so the most important ingredient – the tea – can be the star of the show happening in your mouth.

Storage and shelf life

LYS kombucha is unpasteurized, which means it needs to be stored in the fridge at a constant 4°C. After an hour above that temperature the kombucha will start to ferment again, changing the flavor and dangerously increasing the pressure on the bottle.

Unopened and stored in the fridge at a constant 4°C, the kombucha has no expiration date. The oldest vintage we have tasted so far was one and a half years old, and it had evolved in complexity much like a wine.

Once opened, keep your bottle of kombucha closed and stored at 4°C, and consume within a week. After that it will start to noticeably oxidise and lose its natural carbonation.

The product is available for delivery and pick up from our store in de Pijp.

The product is delivered in glass bottles. We are doing our part to close the loop towards circularity by offering this product in glass container with a deposit (Statiegeld) which can be refunded in full at our store for your next purchase.

LYS kombucha is a living natural product – unfiltered, unpasteurized, and naturally carbonated just like a natural wine. It’s bottled-aged for 5 weeks, which allows it to develop in complexity and flavour over time, while staying true to the unique characteristics of the tea it was made with.

The name is inspired by tradition of Japanese tea ceremonies. We see it as invitation to leave behind any preconceptions you might have about how kombucha should be created and consumed.

Nicolas produces this high-quality product using organic ingredients and lots of skills. Detailed records are kept for all batches and strict hygienic measures are maintained. We have visited his brewery and can attest to this. Yet, like many small farms, organic certification is not financially feasible.
